WHere is a simplified interpretation of a cocktail found on the seasonal menu. Designed as a large-volume pre-mixed that is bursting with tastes of the festive period, which makes it ideal for hosting a holiday party. Save the extra syrup you can use for morning drinks, desserts, or to make another batch of bikinis.
Bikini Recipe
Serves 10 people
For the Citrus Syrup (makes 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g fine sugar
For the Premix (yields 850ml, serving 10)
400ml premium vodka
100ml classic gin
150ml peach-flavored liqueur
200ml citrus syrup (from the recipe above)
A few cranberries, to garnish
Mandarin essential oil, as a final touch
Directions
To prepare the Cordial: Place every items into a saucepan, heat until it reaches a gentle boil, stirring until the sugar dissolves. After that, take off the burner and leave to cool down completely. Pour to a sterilised bottle, cap it and refrigerate it in the refrigerator, where it will keep for up to four weeks.
To make Batch Mix: Combine the specified liquids in a big jug, let it rest for an hour, then strain best through cheesecloth, making it perfectly clear.
For serving: Pour 85ml of the premix into a mixing glass filled with ice, and stir lightly for about 60 seconds to chill. Strain into an frosted cocktail glass or a similar vessel, top with the cranberries and complete it using a light spray of the essential oil over the top.
